The PhD in burgers from Cambridge – 4/5Price: One For Ella £9.50, Classic £7.00
The brainchild of Leo Riethoff and David Underwood who started selling burgers from their iconic Citroen burger van in Cambridge. Success with van 1 meant they branched out with a second, and more recently scaled into their flagship burger joint on Wheeler Street, Cambridge. Our guess is that this isn’t going to be the only S&H for long, we love the look and feel of this place – as do their patrons (2 of which are pictured below). These burgers come served in proper wax-paper which keeps them warm and holds in vital moisture. Upon unwrapping, you’re greeted by a delectable morsel of goodness – this burger is big and heavy, come hungry.
Construction could be better, there’s a healthy helping of bacon in this one, so much so that it protrudes from one end, although there’s ample crispy in the burger too. Quality of the bun is good, fresh brioche sourced locally and toasted perfectly. The 180g of meat was good too, albeit slightly well-done, it is seasoned perfectly, could be a tad more moist but that’s probably down to us not specifying how we want it cooked. We were encouraged by the presence of a burger cloche in the kitchen – virtually guarantees a juicy fry. The cheese is classic American and complements the burger as it should. The burger sauce used here is creamy & salty, we liked the gherkin pieces, they reminded us of capers, definitely a non-traditional touch.
One For Ella is named after someone, we guess, named Ella – if she’s like the burger, then you definitely want to make friends with her. The cross-section below shows an excellent meat-to-bun ratio and it’s all there, smoked bacon, cheese, meat, sauce, gherkins and cheese! If you’re ever in Cambridge, definitely pick one up. We plan to go back and sample their cheeseburger. Enjoy!
